Chocolate Fudge


This recipe makes fudge. Not fudge brownies, just fudge. That's it -plain and simple. Oh yeah, it tastes really good.

Ingredients

(Makes 1 8-inch pan)
  • 2 c. sugar
  • 1 c. condensed milk (unsweetened!)
  • 2 1/2 tbsp. butter
  • 1/4 tsp. salt
  • 2 oz unsweetened chocolate -do NOT use Baker's chocolate, I repeat, do NOT use Baker's Chocolate1
  • 1 tbsp. corn syrup (light)
  • 1 c. chopped walnuts (optional)
  • 1 tsp. vanilla extract

Procedure

  1. Combine sugar, condensed milk, butter, salt, chocolate, and corn syrup in a HEAVY 3-quart saucepan. Heat slowly.
  2. Stir until everything is melted. When the chocolate is melted thoroughly, beat with electric mixer until smooth.
  3. Let cook to halfway between soft and medium ball stage (use candy thermometer if available)
  4. Let cool until barely touchable. (temperature)
  5. Stir in walnuts, vanilla. Beat the mixture until it starts to set.
  6. When it starts to set, get it into an 8-inch square pan (buttered, of course). Don't wait to do it, or you will need to get a big spoon to eat it right out of the pot. Believe me, it is not like licking the bowl!

  1. MMMMMMMMMMMMMM... will someone make this WITH nuts for my visit in a couple weeks??? I'll see you in school on Fri and I fully expect to have some there!
